Something quick and delicious Ingredients:
4 -5 medium eggs, well beaten |
1/4 cup onion, diced |
1/4 cup bell pepper |
1 medium potato, raw diced |
1 large carrot, peeled and diced |
1 cup tasty cheese |
1 teaspoon butter |
Directions:
1. Spray the bottom of a fry pan with non stick cooking spray. 2. Sautee veges over a medium heat. 3. Pour the beaten eggs over the sauteed vegetables. 4. Sprinkle the cheese on top. 5. Cover and cook on a low-med heat until cheese is melted and egg is cooked. 6. Remove from heat. 7. Let it cool slightly before slicing and serving. 8. Enjoy! :-). |
