Good for quick lunch. Try to add more veg. Ingredients:
1/2 cup zucchini, (or other veg) sauted |
1 tbl chopped herbs (thyme, basil or oregano) |
1 medium tomato, chopped |
4 eggs |
1/4 tsp salt |
1/2 tsp pepper |
2 oz shredded cheese (jack or parmesan) |
Directions:
1. Coat a small oven-proof skillet with nonstick cooking spray. Preheat broiler. 2. Gently sauté vegetables and herbs. Pour scrambled eggs around vegetables. 3. Add tomato and cheese on top. Cook for 3 minutes until frittata is cooked around the edges. 4. Place skillet under broiler and broil for 2 minutes, or until frittata is just set and golden around the edges. |
