Low Calorie, full of your choice of vegies, serve for any meal of the day, eat it warm or cold.
Ingredients:
3 eggs
2 egg whites
3/4 cup skim milk
1 pinch of salt
1 pinch of pepper
1/4 cup cheese, grated
sauteed vegetables - choose what you like, nutrition information applies for these vegies
1/2 cup onion, chopped
2 cloves garlic, diced
1/2 cup bok choy (or spinach), chopped
1/3 cup cherry tomatoes (or normal tomatoes), chopped
1/3 cup mushrooms, sliced
Directions:
1. Line and stack deep pie plate with vegetables.
2. Combine and wisk together the eggs, milk, cheese, pepper and salt. Pour mixture into pie plate with vegies.
3. Bake in a moderate oven (180°C) for 40 minutes, then optional sprinkle with extra cheese and place under griller until golden.
4. Serve as a warm meal of refrigerate for later! Yum.
