Ingredients:
1/3 cup onion, chopped |
2/3 cup green pepper, chopped |
1 tablespoon butter |
4 tablespoons olive oil |
1 1/2 cups zucchini, scrubbed, chopped |
2 cloves garlic, minced |
1/2 teaspoon salt |
1/4 cup tomato, peeled, seeded and chopped |
6 large eggs, beaten |
Directions:
1. In skillet, cook onions and green pepper in butter and 2 tablespoons olive oil, stirring, 5 minutes. 2. Add zucchini, cook covered 4 minutes. 3. Add garlic, salt and tomato, cook stirring, 5 minutes. 4. Transfer to bowl. 5. Cool. 6. Add eggs. 7. Over medium heat, heat 2 tablespoons olive oil in 10 ovenproof skillet. 8. Add egg mixture, cook 3-5 minutes till underside is set. 9. Bake preheated 400 degrees F oven for 1 to 2 minutes till puffed and golden. 10. Cut into wedges. |
