Quick and simple dish, ideal for lunch or after work Ingredients:
5 eggs |
100 ml milk, skimmed |
1/2 medium onion |
2 medium potatoes |
1/2 red pepper |
2 tomatoes |
50 g baby corn |
1 tsp olive oil |
50 g cheddar cheese |
1 spring onion |
1/4 tsp black pepper |
1/4 tsp salt |
Directions:
1. beat the eggs with the milk 2. add salt and pepper 3. dice the vegetables and chop the onion 4. cook potatoes and carrot in the microwave for 3 minutes on full power 5. meanwhile heat the olive oil in a frying pan 6. fry the potatoes, carrot, red pepper, onion, spring onion and baby corn until golden 7. add the diced tomatoes (seeds removed) 8. add the egg ann milk mixture and turn the heat down 9. cook on low heat until almost set 10. grate the cheese over the top, and finish off under a hot grill until golden brown and crispy 11. cut into 4 and serve 12. nice served with a side salad |
