Vegetable Curry
Ingredients:
3 carrots
3 stalks celery
1 medium onion
1 bell pepper
10 ounce frozen spinach
6 cloves garlic
3 tbs olive oil
15 ounce diced tomatos
30 ounce chickpeas
4 tbs curry powder
Directions:
1. Saute all the raw vegetables in olive oil until soft.
2. Add the spinach, tomatos, drained chickpeas, and curry powder.
3. Simmer for 20 minutes.
