Simple, easy, quick to the table, and my family loves it. Ingredients:
2 tablespoons butter |
1/4 cup chopped shallot |
1 cup fine couscous |
1 (2 ounce) envelope spring vegetable soup mix (knorr) |
3 cups boiling water |
Directions:
1. Melt the butter in a 3-quart saucepan over medium heat. 2. Add in shallots; stir/saute for 2-3 minutes or until softened. 3. Add in couscous; stir to coat the grains with butter; cook 2-3 minutes. 4. Take pan off of stove burner; stir in the soup mix; add in 2 cups water and stir. 5. Let mixture stand in the pan for 7 minutes. 6. Fluff the couscous and add the remaining water; cover pan and let couscous stand for 5 more minutes. 7. Stir before serving. |
