Sambar is a vegetable stew or chowder based on a broth made with tamarind and toovar dal, and is very popular in the cooking of southern regions of India and and Sri Lanka . 1/2 c toor dhal |
2 garlic cloves |
1 small snakegourd and 1 small carrot , sliced |
( can also use okra, drumstick, carrot, radish, pumpkin, potatoes, tomatoes, brinjal ) |
1 tomato , sliced |
1 onion , sliced |
2 green/red chilli , slit |
2 tbsp tamarind juice |
3 tsp instant sambar powder or make your own |
( sambar powder include roasted 1 tsp lentils, 2 tsp coriander pwd , 1 tsp red chili pwd , 1/2 tsp fenugreek seeds, and curry leaves ) - then powdered |

roasted in 1 tsp oil and grounded |
1 tsp channa dhal , 1 tsp fennel seed , 1 tsp cumin seed |

1 tsp mustard seed |
2 dry chilli , broken |
1 tbsp currry leaves |
Directions:
1. Pressure cook dhal , 1 tsp oil and garlic for 3 to 5 mins . 2. Mix it well . Add the rest of the ing and some water . 3. Check the salt and pressure cook again for 1 to 2 mins . 4. Add the Spice Powder . 5. Now temper and mix well . 6. Serve with steamed rice along with crackers and pickles . 7. ( I love it with fried fish / spicy meat gravy / omlette ) |
