This is a delicious cheesy soup. The key is not to overcook the vegetables. Ingredients:
2 cups diced potatoes |
2 cups cauliflower, chopped |
1 cup onion, chopped |
1 (20 ounce) can tomatoes, mashed |
2 teaspoons salt |
3/4 teaspoon pepper |
1/2 teaspoon oregano |
1 beef bouillon cube |
3 cups water |
3 tablespoons margarine |
1/4 cup flour |
2 cups milk |
1/2 teaspoon dry mustard |
1 tablespoon worcestershire sauce |
1 cup grated cheddar cheese |
Directions:
1. Put the first nine ingredients on to boil until the vegetables are just tender. 2. Do not overcook. 3. Melt margarine in a saucepan. 4. Add flour. 5. Gradually whisk in milk, allowing to thicken. 6. Add mustard, worcestershire and cheese. 7. Pour the saucepan mixture into the vegetable mixture and serve. |
