This is from Del Monte. The recipe makes 6 small servings. Ingredients:
1 cup chopped onion |
1 tablespoon olive oil |
1 tablespoon chili powder |
1 teaspoon ground cumin |
29 ounces canned diced tomatoes, with zesty mild green chiles |
30 ounces low-sodium black beans or 30 ounces kidney beans, drained |
15 1/4 ounces canned whole kernel corn |
1 tablespoon chopped chipotle pepper, with adobo sauce 1 (to taste) |
Directions:
1. Cook onion in oil in large saucepan until tender. 2. Stir in chili powder and cumin. Add undrained tomatoes, beans, corn, and chipotle peppers. 3. Simmer, uncovered, 20 minutes or until thickened, stirring occasionally. Garnish with cilantro, avocados, radishes and cheese, if desired. |
