Ingredients:
1 teaspoon(s) basil |
1 can(s) beans (any kind) |
1 can(s) black eyed peas |
3 boneless skinless chicken breasts (cut up) |
1/2 cup(s) celery |
1 1/2 teaspoon(s) chile powder |
2 tablespoon(s) chopped garlic |
1 can(s) chopped tomatoes (any flavor) |
2 cut up zucchinis |
1/2 cup(s) green pepper |
1 cup(s) herb seasoned broth |
2 tablespoon(s) olive oil |
1 onion chopped |
salt and pepper to taste |
8 ounce(s) sliced mushrooms |
Directions:
1. Sautee green pepper, onion, celery and garlic in a bit of olive oil. Add mushrooms, chili powder, basil, salt and pepper. If needed add a bit of broth. Lightly sautee. Meanwhile in a pot add Zucchini, tomatoes, beans and Black eye peas with 1/2 cup broth. 2. Add sauteed vegetables. 3. Now lightly stir fry chicken 'til not pink on the outside..........add to pot........simmer on low for appr. 45 min. |
