Vegetable & Cheese Frittata |

This starts in the pan and finishes in the oven and is omg good! You can put in anything you really like! Ingredients:
1 cup of diced red/yellow/orange peppers |
1 cup of red onions diced |
4 baby red potatoes washed, and sliced thinly |
1 zucchini washed, sliced and chopped small |
1/2 lb sausage meat or 6 slices of cooked bacon crumbled |
6 eggs |
1 cup cheddar cheese |
1/2 cup parmesan cheese |
salt & pepper |
pinch of red peper flakes (optional) |
1 teaspoon parsley |
vegetable or olive oil |
Directions:
1. 1. Using a large frying pan place a tablespoon oil add the sliced red potatoes and cook until soft and add the sausage meat until that is done about 10 minutes and then add the rest of the veggies and cook through for about another 10 minutes. 2. 2. In a bowl beat the eggs and then add to the pan along with the cheeses, parsley, salt and pepper. 3. 3. you can add a little more oil if needed you dont want it to stick 4. 4. I then place the pan in a preheated 350 degree oven for about 10 minutes or until the eggs are baked through then remove fromoven and sprinkle with red pepper flakes and parsley See Photo |
