                    I discovered this in a cookbook of mine and thought I'd try it-sneaky way to see if my kids will get more veggies in their diet. Ingredients: 
                    
                        
                                                1 (16 ounce) package frozen mixed vegetables, small cut  |  
                                                1 cup mayonnaise  |  
                                                1 cup onion, chopped  |  
                                                1 cup cheese, grated  |  
                                                1 (8 ounce) can sliced water chestnuts (optional)  |  
                                                1 (4 ounce) package ritz crackers, crushed  |  
                                                1/2 cup margarine, melted  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Cook vegetables until tender. 2. Sauté the onion in small amount of oil. 3. Mix vegetables, onions, mayonnaise, cheese, and water chestnuts together and pour into a 9by13 inch dish. 4. Top with crushed Ritz crackers. 5. Drizzle melted margarine over the Ritz. 6. Bake at 375°F for 15 minutes or until bubbly.                              |
