Ingredients:
2 tablespoon(s) bacon bits |
2 eggplants, small |
2 tablespoon(s) extra virgin olive oil |
garlic powder |
1 tablespoon(s) green bell pepper, diced |
ground pepper |
kosher salt |
3/4 cup(s) parmesan cheese, grated |
1 tablespoon(s) red bell pepper, diced |
1 tablespoon(s) red onion, diced |
4 roma tomatoes |
2 yellow squash, small to medium |
Directions:
1. Preheat oven to 350. Spray baking sheet with cooking spray. 2. Cut off the ends of both the eggplants and the yellow squash and cut each lengthwise in half. Lay cut side up and close together on the baking sheet. 3. Cut the tops and a very small piece of the bottoms off the Roma tomatoes and stand them up next to the squash on the baking sheet. 4. Top with the diced veggies. 5. Sprinkle all veggies liberally with the salt, pepper, garlic powder and bacon bits. 6. Carefully sprinkle the Parmesan over every vegetable, piling the cheese high, then drizzle with olive oil. 7. Bake for 12 minutes, until cheese is golden brown. 8. Serve immediately. |
