Vegetable Bowls With Yogurt Lime Dressing |

Savoy lettuce forms the bowl. Vegetables include sweet potates, tomatoes, avocado and black beans are in this too! If unable to find savoy cabbage, bibb lettuce makes a good substitute. Serve with toasted baguette slices. Ingredients:
1/2 cup plain yogurt |
2 tablespoons fresh lime juice |
1 tablespoon soy sauce |
1 tablespoon chili powder |
1 garlic clove, minced |
1/4 cup olive oil |
1 tablespoon soy sauce |
1 tablespoon fresh lime juice |
1 teaspoon chili powder |
1 teaspoon fresh oregano, chopped or 1/2 teaspoon dried oregano |
1 teaspoon olive oil |
1 lb sweet potato, peeled and cut into 1 inch cubes (2 to 3 medium) |
15 ounces black beans, rinsed and drained (canned) |
1 cup cherry tomatoes, halved |
1 medium avocado, chopped |
8 large savoy cabbage leaves |
1/4 cup green onion, sliced |
lime wedge (optional) |
Directions:
1. Combine first 5 ingredients; whisk in oil and set aside. 2. In a small bowl, combine soy sauce, lime juice, chili powder, oregano, and olive oil; set aside. 3. Place sweet potatoes in a microwave safe bowl and toss with half the soy sauce mixture; cover loosely and microwave for 9 minutes. 4. Place beans in another bowl and toss with other half of soy sauce mixture; cover loosely and microwave 1 or 2 minutes. 5. Form four bowls with the 8 cabbage (or lettuce) leaves. 6. Divide potatoes, beans, tomatoes, and avocado among leaves; sprinkle with green onions. 7. Serve with yogurt lime dressing, lime wedges and toasted baguette slices. |
