Biryani ( biriani or beriani ) is a South Asian rice dish made with spices, basmati rice and meat/vegetables . The name is derived from the Persian word beryā(n) which means fried or roasted . Ingredients:
500 g basmati rice , pre soaked |
50 g each of carrots, french beans , potatoes , cauliflower , cut into small cubes and parboiled . |
30 g each of capsicum and shelled green peas |
10 g ginger and mint leaves , finely chopped |
150 g ghee |
100 ml milk |
50 g cream |
little whole garam masala and spices |
some kewra water |
little powdered mace and green cardamom |
Directions:
1. Temper whole garam masala in ghee . 2. Add cream , milk , spices , kewra water . 3. Add the vegetables and saute . 4. Add powdered mace and green cardamom in water and boil . 5. Add the rice to this flavoured water . 6. Strain with 3/4 th done . 7. Put the sauteed vegetables on top along with ginger and mint leaves . 8. Put on dum for 15 mins . 9. Remove from steam and serve hot . |
