A hearty autumn soup using leftover vegetables Ingredients:
4 cups beef broth |
12 cups water |
4 oz. lean beef |
6 cups zucchini |
3 cups cauliflower |
1 cup shredded carrots |
1 cup celery |
2 cups potato |
1 cup squash |
6 tomatoes |
4 cups spinach |
4 cups bell peppers |
8 green onions |
1 tblsp garlic powder |
3 tbsp italian seasoning |
1 tsp black pepper |
Directions:
1. dice vegetables 2. thinly slice beef 3. add liquids 4. simmer for about an hour |
