Use crushed tomatoes instead of diced to create a thick and filling soup. Lots of vitamins and nutrients and wonderful for a cool autumn evening. Add a dash of hot sauce for a little more zing. Ingredients:
22 oz. diced tomatoes |
12 oz. black beans |
12 oz. red beans |
24 oz. frozen mixed vegetables |
1/2 cup chopped onion |
3 cloves garlic |
3 t olive oil |
1/2 tsp ginger |
1/2 tsp mustard |
1/2 tsp salt |
1 t pepper |
1/2 tsp tarragon |
1/2 tsp parsley |
16 oz. organic chicken broth |
Directions:
1. Saute onions and garlic in olive oil in bottom of soup pot until onions are clear. Add spices and cook one minute. Add tomatoes, veggies, beans and broth. Top with water if needed. Bring to a boil, then reduce heat, cover and simmer 1/2 hour to 1 hour. Top with scallions if desired. |
