Vegetable & Bean Burrito Fulling

Very veggie burrito filling.
Ingredients:
3 cups onion, chopped
1 cup red bell pepper, chopped
1 cup poblano pepper, chopped
1 cup corn, cut off of cob
1 tbsp garlic, minced
100 grams tomato, chopped
450 grams ro tel
450 grams fat free refried beans
1/4 cup lime juice, fresh squeeze
3 tbsp cilantro, chopped
1 pinch salt
1 pinch oregano
Directions:
1. Sweat the first six ingredients until onions turn clear.
2. Add Ro-Tel and stir on medium high heat for 2 minutes.
3. Add refried beans and stir on medium high heat for 2 minutes.
4. Add remaining ingredients, stirring constantly for five more minutes. When cilantro turns dark green, the filling is ready.
5. Pour into tortillas for burritos.
