Vegetable & Bean Burrito Fulling |

Very veggie burrito filling. Ingredients:
3 cups onion, chopped |
1 cup red bell pepper, chopped |
1 cup poblano pepper, chopped |
1 cup corn, cut off of cob |
1 tbsp garlic, minced |
100 grams tomato, chopped |
450 grams ro tel |
450 grams fat free refried beans |
1/4 cup lime juice, fresh squeeze |
3 tbsp cilantro, chopped |
1 pinch salt |
1 pinch oregano |
Directions:
1. Sweat the first six ingredients until onions turn clear. 2. Add Ro-Tel and stir on medium high heat for 2 minutes. 3. Add refried beans and stir on medium high heat for 2 minutes. 4. Add remaining ingredients, stirring constantly for five more minutes. When cilantro turns dark green, the filling is ready. 5. Pour into tortillas for burritos. |
