Vegetable and Sausage Skillet Supper |

Ingredients:
1 15-oz. can(s) black beans, rinsed and drained |
2 cup(s) cooked brown rice |
1/2 teaspoon(s) dried oregano |
2 clove(s) garlic, minced |
1/2 teaspoon(s) ground cumin |
hot sauce to taste |
8 ounce(s) low-fat or regular kielbasa, cut into 1/2-inch slices |
1 tablespoon(s) oil |
2 medium onions, finely chopped |
1 large red bell pepper, seeded and diced |
1/2 teaspoon(s) salt, or to taste |
1/2 cup(s) water |
2 medium zucchini, cut into 1/2-inch dice |
Directions:
1. Cook kielbasa in a large nonstick skillet over high heat, stirring occasionally, until lightly browned, about 2 minutes. Transfer to a plate. 2. Add the oil to the skillet. Add onions, zucchini, bell pepper, garlic, cumin, oregano and salt. Cook, stirring, until onions are tender, 4 to 5 minutes. 3. Stir in rice, beans and water. Cook, stirring, until heated through, about 4 minutes. Add reserved kielbasa and season to taste with hot sauce. |
