A crockpot recipe Ingredients:
2 potatoes, diced |
2 zucchini, diced |
1 carrot, diced |
1 stalk celery, diced |
3 scallions, diced |
4 cups vegetable stock |
salt |
pepper |
15 ounces creamed corn |
1 cup cheddar cheese, grated |
2 tablespoons italian parsley, chopped |
Directions:
1. Add potato, zucchini, carrot, celery, and scallions to slow cooker,. 2. Add stock and season with salt and pepper. 3. Cook on high 3-4 hours. 4. Just before serving, add creamed corn, cheese and parsley. 5. Serve when cheese has just melted. |
