This is one of those unforgetable dishes that you make, and know if you want something different where to go - So very tasty - Ingredients:
3 cups cherry tomatoes or 3 cups grape tomatoes |
1/4 cup balsamic vinegar |
2 tablespoons olive oil |
2 garlic cloves, minced |
1 teaspoon salt |
1 teaspoon pepper |
6 cups baby spinach (approximately 1 bag) |
1 (450 g) package spaghettini |
1/2 cup asiago cheese, shredded |
1/4 cup fresh basil or 1/4 cup parsley, chopped |
toasted pine nuts (optional) |
Directions:
1. Preheat oven to 400°F Toss tomatoes with balsamic vinegar, oilve oil, garlic, salt and pepper. Spread tomatoes on foil-lined baking sheet, and roast for 20-30 minutes or until shriveled and lightly browned. Scrape tomatoes and juices into a large bowl. Add spinach. 2. Meanwhile, prepare pasta according ot package directions. 3. Toss the pasta with spinach, roasted tomatoes, Asiago and basil. 4. Sprinkle with toasted nuts if using. Serve with additional cheese on the side . |
