                    Great as a side dish that could use other vegetables as a substitute, such as broccoli, spinach or beans could be used instead of peas. Carrot or sweet potatoes could be substituted for pumpkin. I think a chopped spring onion added in would be very nice as well. Ingredients: 
                    
                        
                                                1 cup peas, shelled  |  
                                                100 g pumpkin, thinly sliced  |  
                                                1 large tomato, thinly sliced  |  
                                                50 g cheddar cheese, grated  |  
                                                2 slices bread, crumbed  |  
                                                1 egg, lightly beaten  |  
                                                1 cup milk  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Press peas over the base of two individual one cup ovenproof dishes. Cover with a layer of pumpkin, then the tomato. Mix together the remaining ingredients and pour over the vegetables. 2. Bake at 180C for 30 minutes or until set and golden brown.                              |
