all measures approximate; salad dressing is any dressing that is approx 45 calories per 2 tbsp. Ingredients:
50 grams zucchini, chopped |
30 grams broccoli, chopped |
25 grams cucumber, chopped |
25 grams red onion, diced |
25 grams yellow pepper |
25 grams red pepper |
4 mushrooms, quartered and fried |
8 tbsp newmans own salad dressing |
1 tbsp balsamic vinegar |
Directions:
1. Cut all into bite-size chunks. Mushrooms can be cooked ahead and cooled. Broccoli can be put in with mushrooms for last 5 minutes of cooking to take the bite out of them. 2. Mushrooms and broccoli can be marinated overnight and the rest of the salad assembled before eating. Add whatever additional dressing is required, along with the balsamic vinegar (or balsamic reduction - yum). Very tasty and easy. |
