This salad is not only for the vegetarian, but works well for healthy conscious individuals, dieters, and fast food eaters. Ingredients:
2 cups romaine lettuce |
2 cups diced ripe tomatoes |
1/2 cup sliced radish |
1/2 cup sliced cucumber |
1/4 cup orange slice |
1/4 cup bell pepper |
1/4 cup diced celery |
1 cup bean sprouts |
1 cup yogurt |
1/2 teaspoon lemon juice |
salt and pepper |
1/2 fresh jalapeno, finely minced (optional) |
Directions:
1. Mix romaine, bean sprouts, and vegetables in large bowl. 2. Right before serving, mix yogurt, lemon juice, salt & pepper and jalapeƱo (optional). 3. Pour over salad. 4. Can top with tofu, nuts, or whatever you wish. |
