This is a delicious stuffing , Which I use to bake in a pan when I was vegan, still delicious and a healthier option than boxed regardless of your lifestyle choices. Ingredients:
14 bread slices lightly toasted , cubed |
1 1/2 cups dried cranberries |
2 1/2 cups apple juice |
1 red onion |
2 stalks celery , diced |
3 cloves garlic , minced |
2 tbsp vegan margarine |
1 tsp thyme |
1 tsp sage |
1 tbsp parsley |
1/2 tsp fresh ground black pepper |
1/2 tsp freash ground sea salt |
1/4 tsp ginger |
1/4 tsp cinnamon |
Directions:
1. Preheat oven to 350 if cooking in baking pan 2. Pour applejuice over cranberries, set aside 3. In skillet Saute onions , celery and garlic until soft 3-5 mins 4. Adds herbs, Saute another min 5. In a larger bowl combine all ingredient and mix well 6. bake 20-25 mins |
