Bell peppers stuffed with rice mixture. High fiber with lots of vitamins C & A. I adapt this recipe to fit whatever's in the fridge. Ingredients:
2 large red bell peppers |
6 oz tomato paste |
2 cups cooked brown rice |
1 onion, minced |
1 small tomato, chopped |
1 mushroom, minced |
1 clove garlic, minced |
2 green onions |
1/2 tsp salt |
1/2 tsp curry powder |
1/2 tsp onion powder |
1/2 tsp chili powder |
1/4 c lime juice |
1 tbsp olive oil |
Directions:
1. Cook rice according to directions on package. 2. Preheat oven to ~350 F. 3. Saute onion and garlic until almost translucent, add mushroom and cook for a moment more. Add rice, tomato, tomato paste, lime juice, and seasoning and cook for 2-3 minutes. 4. Half the peppers and fill with the rice mixture, and bake for 15-25 minutes. |
