This is adapted from a recipe on . It is gluten-free and sugar-free. Ingredients:
1 tablespoon cooking oil |
1 medium onion, minced |
3 stalks celery, minced |
2 cups tomatoes, diced |
1 teaspoon paprika |
1 teaspoon tarragon |
1 teaspoon salt |
3 (15 ounce) cans white beans, rinsed and drained |
4 cups lettuce |
1 avocado, sliced |
Directions:
1. Heat the oil in a large skillet or wok over medium high heat. Add the onion and celery and sauté until golden. 2. Stir in the tomato and seasonings. Bring to a simmer. 3. Add the beans and simmer for 30 minutes on very low heat. 4. Divide the lettuce evenly onto 4 plates. Top with 1/4 of the stewed beans and then arrange sliced avocado over all. |
