Comfort food vegan style. Ingredients:
1 onion, chopped |
3 carrots, chopped |
3 potatoes, chopped |
1 parsnip, chopped |
1 turnip, chopped |
1/4 cup uncooked white rice |
1 teaspoon ground black pepper |
1 teaspoon ground cumin |
1 teaspoon salt |
2 1/2 cups water |
Directions:
1. In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water. Boil until vegetables are tender, about 30 minutes, adding more water if necessary. |
