Dairy-free, Egg-free, moist and tasty spice cake. Ingredients:
1 1/2 cups flour (i used unbleached flour) |
1 cup white sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon ginger |
1/2 teaspoon allspice |
1/4 teaspoon clove |
1/2 cup raisins |
1 tablespoon white vinegar |
1 teaspoon vanilla extract |
1/3 cup oil |
1 cup ginger ale |
Directions:
1. Combine flour, sugar, baking powder, salt and spices in a mixing bowl. 2. Add vinegar, vanilla, oil, and ginger ale to the dry ingredients - stirring until just mixed. 3. Fold in raisins. 4. Pour batter into a greased and floured 8x8 cake pan. 5. Bake at 350F for 30-40 minutes or until cake tester comes out clean. |
