Melt-in-your mouth confections that are cruelty-free. Found in the The Joy of Vegan Baking Ingredients:
1 cup margarine |
1/4 cup granulated sugar |
2 teaspoons almond extract |
2 cups all-purpose flour |
2 cups pecans, finely chopped |
2 cups confectioners' sugar |
Directions:
1. Preheat the oven to 300* F. 2. Cream the sugar, almond extract and butter until light and fluffy. 3. Add the flour and mix throughly. Add the chopped nuts and mix well until blended. 4. Measure out generously rounded teaspoons of batter and roll them into neat balls. Place the balls 1 apart on a non-stick cookie sheet. 5. Bake for 30 minutes or until light golden brown. 6. Roll the cookies in confectioner's sugar while still warm. |
