I like to call them my Dirty Joes because they are just that good! If you went vegan (or want to try a new take on the kiddie dish) then make these sloppy joes that are animal friendly, healthy and o so simple! Ingredients:
2 tablespoons olive oil |
1/4 cup onion |
1/4 cup red bell pepper |
1/2 cup coleslaw mix (or i use broccoli slaw) |
2 vegan burgers, crumbled |
1/4 cup ketchup |
1/4 cup barbecue sauce |
2 tablespoons apple cider vinegar |
2 tablespoons yellow mustard |
8 slices multigrain bread, toasted |
Directions:
1. Combine ketchup, barbque sauce, apple cider vinegar, and mustard in a small bowl and set aside. 2. In a skillet, heat olive oil and stir-fry the onion and pepper. 3. Stir in the coleslaw and burger crumbles until hot. 4. Pour in the sauce mixture, stir, and then top over toasted bread. |
