Vegan Pumpkin-Oatmeal Cookies |

Ingredients:
1 cup canned pumpkin |
1 cup brown sugar |
2 egg substitute |
1 1/2 cups flour |
1 teaspoon baking soda |
1/2 teaspoon nutmeg |
1 teaspoon cinnamon |
1/2 teaspoon clove |
3 cups oatmeal |
1 cup raisins |
Directions:
1. Mix and form into small balls. The cookies will expand slightly but they shouldn't be too flat when they're done. 2. Bake on greased cookie sheet at 350 for 10-20 minutes. 3. For the egg substitute, I've made it successfully using both Ener-G egg replacer and applesauce. I'm sure that there are other substitutes that would work as well. |
