Ingredients:
1 1/4 cups oats |
1 cup flour |
1 teaspoon baking powder |
1 1/2 teaspoons pumpkin spice |
1/2 teaspoon baking soda |
1/4 cup soymilk |
1/4 cup egg substitute |
1 cup canned pumpkin |
3/4 cup brown sugar |
1/2 teaspoon salt |
1 teaspoon vanilla |
1 tablespoon brown sugar |
1 1/2 teaspoons cinnamon |
Directions:
1. Mix all ingredients except the last two and pour them into greased muffin tins. 2. For each muffin, mix the 1 Tbsp brown sugar and the 1 1/2 tsp cinnamon and place them on top. 3. Bake at 375 degrees for 25-30 minutes. |
