My hubby grew up in the South eating this, and I veganized it for him. He said it tastes just like the real thing. Ingredients:
1 cup raw cashews |
3 teaspoons lemon juice |
1/2 cup nutritional yeast |
1/2 cup vegan mayonnaise (preferably vegenaise) |
1 (8 ounce) container vegan cream cheese |
1 (8 ounce) package vegan cheese (preferably vegan gourmet cheddar) |
4 teaspoons apple cider vinegar |
8 ounces pimientos, drained |
1/2 teaspoon pepper |
Directions:
1. Mix everything together with a mixer unless well-blended. Chill at least one hour to get best taste. |
