low-fat vegan cupcakes. CC wouldn't allow me to use soy yogurt in the recipe so make sure to use soy yogurt to make these vegan. Ingredients:
1/2 cup yogurt |
2/3 cup soy milk |
1/4 cup applesauce |
3 tbsp canola oil |
3/4 cup granulated sugar |
1 1/2 tsp vanilla extract |
1 1/4 cup flour |
2 tbsp cornstarch |
3/4 tsp baking powder |
1/2 tsp baking soda |
1/4 tsp salt |
Directions:
1. preheat oven to 350 and line muffin pan with liners. 2. in large bowl whisk yogurt, soy milk, applesauce, oil, sugar, and vanilla. sift in flour cornstarch, baking soda, and salt, and mix. 3. fill cupcake liners three-quarters full. bake 22 to 24 minutes until a knife or toothpick inserted through the center comes out clean. transfer to cooling rack to cool completely. |
