I developed this in response to the cost of buying canned. It is a very hearty and tasty main course stew that is very inexpensive and simple to make. Ingredients:
1/4 c olive oil |
1 onion, diced |
4-6 cloves garlic, minced |
1 cup diced potatoes |
2 carrots, diced |
2 stalks celery including tops, diced |
1 tablespoon italian seasoning |
3 bay leaves |
3/4 teaspoon cumin |
15 cups water |
1 1/2 tablespoons salt |
(or, reduce onion, and garlic, remove salt, and use soup stock) |
3 1/2 cups lentils |
Directions:
1. Sautee spices, onion and vegetables in olive oil until onion is translucent. 2. Add garlic and spices and sautee 3 more minutes. 3. Add water and salt or soup stock, and lentils. Bring to a boil. 4. Simmer until vegetables and lentils are tender, about 30-45 minutes. |
