Vegan Italian Pasta Salad |

Sweet balsamic vinegar, bright cherry tomatoes and fresh basil will bring a delight to your lunch table or dinner party! Ingredients:
8 oz (uncooked) whole wheat spiral pasta |
1 1/2 tbsp balsamic vinegar |
1 tbsp vegetable broth or pasta cooking water |
1/2 tsp dried oregano |
1 cup cherry tomatoes, halved |
1/2 cup basil, fresh, chopped |
1/2 cup fresh baby spinach leaves, washed |
1/4 tsp table salt, or to taste |
1/4 tsp black pepper |
Directions:
1. Cook pasta about 8 minutes, unil al dente. 2. Drain and transfer to a large bowl. 3. Add vinegar, broth and oregano; toss to coat. 4. Fold in tomatoes, basil and spinach. 5. Season to taste with salt and pepper. 6. Serve room temperature, or chilled if desired. |
