So I had some vegan friends over for a late night soiree and had to get a little creative with what I had. This simple, healthy salad was a hit. Ingredients:
1/2 lemon, juiced |
2 tablespoons balsamic vinegar |
1 teaspoon maple syrup |
1 clove garlic, minced |
1/3 cup extra virgin olive oil |
1 cucumber, diced |
1 small sweet onion, diced |
2 roma (plum) tomatoes, chopped |
2 (15 ounce) cans fava beans, drained |
Directions:
1. Whisk the lemon juice, balsamic vinegar, maple syrup, garlic, and olive oil together in a bowl to make the dressing. 2. Toss the cucumber, onion, tomatoes, and fava beans together in a large bowl; pour the dressing over the vegetable mixture and toss to coat. Chill for 1 hour before serving. |
