Tofu based vegan egg salad Ingredients:
15 oz firm tofu |
1 stalk celery |
1/2 medium onion |
8 tbs vegenaise |
1/4 tsp table salt |
1 tbs parsley |
1 dash turmeric |
1 tsp red pepper flakes |
1 tsp paprika |
Directions:
1. Pre heat pan on medium with a tablespoon of water. 2. Cut a block of tofu into 3 equal sections. 3. Crumble 2 sections into the pan, brown the tofu. 4. Dice up the onion and celery. Once the tofu is lightly browned add the onion and celery. Mix. Let it cook. 5. Chop up the last 3rd of the tofu block into small strips and cubes. Then add to the pan with the spices. Mix 6. Let it cook for a few minutes then turn off the heat and add the vegenaise. Mix. Let cool in refrigerator. 7. Serving size is 1/3 cup |
