Vegan-Diabetic Avocado Chocolate Mousse |

We got this recipe from Jim Forniatos of San Francisco's Dark Room theater. Ingredients:
2 large soft avocados (approx 1-2 pounds of avocado) |
1/2 cup hot coffee |
2 tablespoons raw cacao powder (get the pure, fancy stuff) |
1 dash agave nectar |
stevia (to taste) |
Directions:
1. Peel and pit the avocados. Dump avocados, coffee, cacao powder and agave nectar into a bowl and mix till smooth (use a hand mixer?). Add the stevia slowly to taste. Put in pretty serving bowls and chill. Really, it’s that simple. |
