Vegan Curried Potato and Spinach Soup |

From veggie works vegan cook book. Ingredients:
2 onions |
1 tbsp salt |
1/4 cup soy oil |
2 tbsp curry powder |
6 potatoes |
3 lbs spinach |
12 cups stock |
2 cups water |
Directions:
1. In a large soup pot, saute chopped onions with salt in the soy oil. 2. Add in the curry powder and cook five minutes more. 3. Wash and peel potatoes, cut into chunks and mix into saute. 4. Cover and cook for another ten minutes then ad the washed spinach. 5. Pour in vegetable stock and water. 6. Simmer until potatoes are soft. |
