Vegan Creamy Garlic Mashed Potatoes |

Creamy and garlicky. You'll never miss the cholesterol-filled animal-based ones. Ingredients:
3 large baking potatoes |
1 tsp vegetable oil |
6 garlic cloves, minced |
3/4 c soy milk |
3 tbsp soy margarine |
Directions:
1. Dice potatoes (Your choice to peel or leave unpeeled). 2. Boil about 15 minutes, or until soft. 3. Heat oil over medium heat in small pan. 4. Sauté garlic 30 seconds. 5. Add soy milk, reduce to simmer. 6. Keep warn until potatoes are cooked. 7. Mash potatoes in large bowl. Add margarine. Add just enough soy milk/ garlic mixture to make as creamy as you like. 8. If desired, serve with “The Best Vegan Gravy Ever”. |
