Vegan Cranberry-Walnut Pumpkin Muffins

Ingredients:
3 1/2 cups flour
1 1/2 teaspoons salt
1 cup vegetable oil
1 teaspoon cinnamon
6 teaspoons baking soda
2/3 cup water
2 cups pumpkin
3 cups sugar
1 cup silken tofu
1/2 cup chopped walnuts
1 cup fresh cranberries
Directions:
1. Mix dry ingredients together.
2. Mix wet ingredients together and gently add to dry ingredients.
3. Stir only until ingredients are mixed.
4. Fold in walnuts & cranberries.
5. Bake at 350°F until toothpick inserted in center comes out clean - about 30 minutes.
