From The Dirty South Cookbook by Ryan Splint. Ingredients:
1 1/4 cups flour |
3/4 cup cornmeal |
1/2 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup soymilk |
1/4 cup vegetable oil |
2 tablespoons arrowroot, mixed with 1/4 cup applesauce |
1/2-1 cup corn |
Directions:
1. Combine the dry ingredients. 2. Add everything else and stir just till it's all combined. 3. Pour the batter into a greased pan and bake at 400 degrees for 25 minutes. 4. Test by sticking a fork or toothpick into the center-it should come out mostly clean. |
