Vegan Corn Chowder

Ingredients:
1 small onion
1 cup celery
1 cup carrot
2 cloves garlic
1 leek
1 medium potato
1 cup vegetable broth
1 tsp black pepper
1 cup corn
1 cup soy milk
Directions:
1. Dice onion, chop celery, chop potato, slice carrot, slice white and pale green sectons of the leek, mince garlic
2. Saute onion & garlic until onion is translucent. Add celery, carrot (if using fresh), and leeks. Saute for a few minutes.
3. Add potato, vegetable broth, and spices. Bring to a boil and reduce heat. Simmer until potato is tender.
4. Using a blender or food processor, blend half the soup until smooth. Return to pot and stir in corn and soy milk. Turn off the heat and let soup sit for 5 minutes.
