This recipe is so easy and so simple. I was very surprised at how yummy they were. Ingredients:
olive oil cooking spray (such as pamĀ®) |
2 1/2 cups unsweetened, flaked coconut |
1 cup unbleached flour |
3/4 cup cashews |
3/4 cup water |
1/2 cup turbinado raw sugar |
1/2 teaspoon salt |
1/2 teaspoon almond extract (optional) |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. Spray a baking sheet with cooking spray. 3. Combine coconut and flour in a large bowl. 4. Puree cashews, water, sugar, salt, and almond extract together in a blender. 5. Stir cashew mixture into coconut mixture until well blended. 6. Form coconut mixture into 1-inch balls and flatten; arrange on the prepared baking sheet. 7. Bake cookies in the preheated oven until edges are golden, 12 to 15 minutes. |
