These are delicious! Almost cake-like , just absolutely wonderful! Ingredients:
1 c flour (i like to use 1/2 white and 1/2 whole wheat flours) |
1/2 tsp baking soda |
1/2 tsp baking powder |
1/2 tsp cinnamon |
1 c vanilla soy milk |
1 t oil |
1 tsp vanilla |
1/4 c sugar |
Directions:
1. Sift together flour, soda, baking powder, and cinnamon 2. Mix the rest of the ingredients together then add to dry ingredients and stir till just mixed. 3. Toss in any extras if you'd like (Ex: Blueberries, etc.) 4. Heat lightly greased skillet to medium heat 5. Drop a 1/4 cup of batter in skillet and cover 6. Turn when center starts to bubble and cover again 7. *If you don't have any vanilla on hand, using 1 tbsp of maple syrup instead works nicely. |
