Vegan Chocolate Cake & Chocolate Frosting |

Oh so yummy and rich chocolate on chocolate. I always make extra frosting because we like to pile it on! Found this on and use it all the time. I like to make it in a bundt pan so there is a high ratio of frosting to cake. Enjoy! Ingredients:
3 cups flour |
2 cups sugar |
6 tablespoons cocoa |
2 teaspoons baking soda |
1 teaspoon salt |
3/4 cup vegetable oil |
2 tablespoons vinegar |
2 teaspoons vanilla |
2 cups cold water |
8 ounces imitation cream cheese (i use tofutti brand) |
1 teaspoon vanilla |
1/2 cup cocoa |
1 1/2-2 cups powdered sugar |
Directions:
1. For the cake:. 2. Mix the first 5 (dry) ingredients. 3. Add the next 4 (wet) ingredients, stir until smooth. 4. Bake in two greased, floured pans at 350 degrees for 30 minutes. 5. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. 6. For the frosting:. 7. Using an electric mixer, mix the final 4 ingredients until smooth. 8. Frost cake when it has cooled. |
