Ingredients:
1 1/2 cups unbleached flour |
3/4 cup sugar |
1/2 teaspoon salt |
1 teaspoon baking soda |
3 tablespoons cocoa powder |
1 teaspoon vanilla |
1/3 cup vegetable oil |
1 tablespoon vinegar |
1 cup cold water |
2 tablespoons earth balance butter |
1 1/3 cups powdered sugar |
1/3 cup cocoa powder |
1/2 teaspoon vanilla |
2 -4 tablespoons water |
Directions:
1. For the cake:. 2. Preheat oven to 350 degrees. 3. Combine flour, sugar, salt, baking soda, and cocoa powder in large bowl. 4. Make a well in the center then add the vanilla, oil, vinegar, and water. 5. Stir until mixed well. 6. Pour into greased 9x9 baking dish or cupcake pan (will make 8 cupcakes). 7. Bake 30 minutes. Should pass the toothpick test. 8. For the frosting:. 9. Cream the 'butter' in a bowl. 10. Add sugar, cocoa, vanilla, and water to make a thick but spreadable frosting. |
